Chop the veggies into slightly smaller pieces than you might use with the oven, this will speed the cooking time, Heat oil in a large skillet, until it’s quite hot, Toss in the veggies and let them brown, Stir occasionally but not too much because the browning part is key, Once brown, sprinkle with some salt, Turn the heat down as low as it will go, cover the skillet with a lid so it can “roast” about 10 minutes, Once it’s done, turn it off and let it just mellow on the stove.
