The Lebanese use more parsley than bulgur wheat in their tabbouleh, Levantine cuisine is the traditional cuisine of the Levant, known in Arabic as the Bilad al-Sham and Mashriq, which covers a large area of the Eastern Mediterranean. It continues to carry an influentially mainstream character in a majority of the dishes today. It is found in the modern states of Cyprus, Jordan, Lebanon, Israel, Palestine, Syria, and parts of southern Turkey near Adana, Gaziantep, and Antakya (the former Vilayet of Aleppo). Conversely, some of the dishes listed below may have early origins in neighboring regions, but have long since become traditions in the Levant. Perhaps the most distinctive aspect of Levantine cuisine is meze including tabbouleh, hummus and baba ghanoush. Bulgur is parboiled cracked wheat, so it’s a whole grain. Once prepared, it’s tender and fluffy. Bulgur is often confused with couscous, but they’re not the same. Authentic tabbouleh is made with super fine grain bulgur and it’s soaked rather than cooked. Fresh Parsley Authentic tabbouli uses a ton of parsley. Fresh Mint Mint is standard and adds even more fresh flavor. Cucumber and Tomato Fresh cucumber and tomato add more texture and color, and build on the refreshing factor.
