A super easy and healthy vegetable fried rice recipe is a quick meal planning for any day and any time that comes together quickly in one pot and one shot!

Topped with crunchy crushed peanuts and cilantro, the best homemade vegan, vegetarian, and gluten-free fried rice recipe.

My husband is a fan of Thai recipes for as long as I can remember.

Before making it at home, I wasn’t quite sure what ingredients I can substitute for fish sauce and umami flavors.

This fried rice can generally be eaten on their own since they are flavorful.

You can serve it along with some Thai Curries such as Red Thai Curry or Green Thai Curry or Thai Coconut Sauce.

STORAGE SUGGESTIONS:- This fried rice recipe stays good in the refrigerator for about 2 days if stored in an airtight container.

I have prepared this dish in my pressure cooker, you can use an instant pot,

if using an instant pot cook Set the pot to MANUAL/PRESSURE COOK (High Pressure)

set the timer to 4 minutes.

When the instant pot beeps, let the pressure release naturally for 10 minutes and then quickly release the pressure manually.

VARIATIONS:- 

Rice: Jasmine rice is the ideal choice for this recipe but you can also use any short-grain rice.

If you are looking for a healthier choice use quinoa, millets, or cauliflower rice.

Protein: Add Tofu

Spicy:- you can add Red chili flakes or sriracha or red chili sauce

Oil:- you can use regular cooking oil

Vegetables: – Add Vegetables according to your choice, some vegetables are carrot, peas, beans, broccoli, bell pepper
