Ethiopian cuisine characteristically consists of vegetable and often very spicy meat dishes. This is usually in the form of wat, a thick stew, served atop injera, a large sourdough flatbread, made out of fermented teff flour. Ethiopian cuisine contains many dishes that are vegan and Vegetarian. Berbere is a traditional Ethiopian spice blend composed of chiles, , fenugreek and a handful of warm spices, such as allspice and cinnamon. The flavors of this blend come together to create a complex seasoning perfect for everything from marinating meat, vegetables, legumes to sprinkling over fruit. Niter kibbeh, or niter qibe also called tesmi , is a seasoned, clarified butter used in Ethiopian and Eritrean cuisine. Its preparation is similar to that of ghee, but niter kibbeh is simmered with spices such as "besobela" (known as Ethiopian sacred basil), koseret, fenugreek, cumin, coriander, turmeric, cardamom ,cinnamon, or nutmeg before straining, imparting a distinct, spicy aroma. The version using vegetable oil instead of butter is called "yeqimem zeyet".   • 5 tsp Paprika
  • 1 tbsp Salt
  • 3/8 tsp Ground Fenugreek
  • 1/2 tsp Ground Ginger
  • 3 tsp Red Chilli powder
  • 1 tsp Ground Coriander
  • 1/4 tsp All Spice
  • 1/4 tsp Nutmeg
  • 3/8 tsp Ground Cardamom
  • 1/8 tsp Ground Clove
  • Niter Kibbeh :-
  • 1 tsp Coriander seeds
  • 1/4 tsp Fenugreek seed
  • 4 Green cardamom
  • 1 Cinnamon
  • 1 Black Cardamom
  • 4 Cloves
  • 1/4 cup Yellow onion
  • 1 Ginger
  • 1 Garlic clove
  • 4 oz Butter
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1/4 tsp Ground Nutmeg

  • 1 tbsp tbsp Niter Ethiopian Spiced Butter
  • 1 tsp Minced Ginger
  • 1 Minced Garlic Clove
  • 1 Chilli pepper

  • 1 lb Chopped Collards and Kale
  • 1 tsp Berbere spice blend
  • 1 tbsp Lemon juice
