Corn grits work great in this recipe.
To make homemade buttermilk stir in 1/4 tsp to 1/2 tsp of vinegar or lemon juice into a cup of milk, stir slowly. let is sit for 5 minutes until the milk begins to curdle and become acidic. Buttermilk is ready.
